yes, a2091 is good, it will work. I suggest you get a2091 with some RAM onboard, it should speed things up.
Better sorry than worry.

SCSI HD of course. Plus, I think it had a scsi port on the back of the card, so you can hook external SCSI peripherals up to it like scanners.

All the card slots in the A2000 are Zorro2.

Yep, you can get adaptors on Ebay easy.

SCA 80 - 50pin adaptors are now available,

http://cgi.ebay.com.au/ws/eBayISAPI.dll?ViewItem&ih=007&sspagename=STRK%3AMEWA%3AIT&viewitem=&item=170058621287&rd=1&rd=1

but I also have other kinds for other SCSI variants.

I just grabbed 4 x 4.3gb SCSI drives from ebay for 18 dollars Australian.  To use them with an Amiga, I will have to buy one of the above adaptors for each drive.  They are SCA 80pin.  All the Amiga stuff I have is either 25pin Dsub, IDS 50pin or Centronics 50 pin.

Be aware that if you get a scsi drive bigger than 1GB, you need to have the latest (7.0) firmware ROMS on the 2091. The drives won't work otherwise.

I scored a free Sun external drive box with 2 of those 4GB drives and can't use them... at least not on the 2091
